Lasagna

During our last department ‘makan-makan’ session on 15Sept2011, my colleague, Zaireen made this lovely lasagna. It was nice and not too cheesy (in Malay, ‘tak jelak’). All of us keep asking her for the recipe and she was generously emailed to us the recipe with photos. (Yes, Zaireen, you have the quality being a good auditor, welcome to the department). Zaireen was our newest member in the department who got transferred from another department.

This was the exact recipe she gave and I did last Sunday… the outcome was thumb up by JL… the only thing I would need to make it thinner and also baked longer as the lasagna sheets were not soft enough.

Generally there are 3 layers – Bolognese Sauce, Cream Cheese Sauce and Lasagna Sheets. The last and top layer would be the Cream Cheese Sauce with Mozarella+Parmesan cheese.

Ingredients:
Bolognese sauce
3-4 cups minced chicken
½ cup button mushroom
1 can Prego sauce (original)
1 cup onion, diced
3 cloves garlic, chopped
Butter

• Sauté the onion and garlic with butter until golden brown.
• Add the minced chicken and wait until the chicken dry (half cooked) before you put in the mushroom.
• Pour in the Prego sauce (you can also use Kimball sauce, tomato paste or DIY own red pasta sauce. Add salt, dry basil or oregano to taste if you want too but I didn’t since I am using Prego sauce. Wait till the sauce is a bit dry.

Cream cheese sauce
4 tbs butter
2 tbs flour
3 cups fresh milk
1 cup cheddar cheese
Salt
Pepper

• Heat the butter. Put in the flour and sauté till brown (in low heat).
• Add in the milk and wait till it simmers before you put in the cheese.
• Season with salt and pepper

Topping
Mozzarella cheese (grated)
Parmesan cheese (grated)

Lasagna Sheets - I used Tesco brand which can be easily found at pasta section.
Method:
• In a casserole (any baking dish will do but square would be better), start by layering the Bolognese sauce, followed with lasagna sheet, then scoop the Bolognese sauce again, followed by cream cheese sauce and finish with lasagna sheet.
• Repeat this till you find the right ‘height’ of your lasagna.
• At the last layer (top), pour the cream cheese sauce and sprinkle with grated Mozzarella and Parmesan cheese.
• Bake in preheated oven at 150’c (the temp may differ depends on your oven) for 30 mins.
